Golden Brown Cornbread with Jalapeños

Delicious golden brown cornbread for an extra treat!

These are so easy to make and yet easy to count as a snack for your calories for the day.

I've made these two different ways.

I've made a homemade cornbread recipe using cornmeal, flour, sugar, an egg, milk, oil, etc...


This time I used the boxed recipe from Trader Joe's.  It's a time saver... add oil, milk and egg - throw into the oven.

I also add some jalapeños on top of some of them for an extra kick.  I have a jalapeño plant in my backyard that produces a lot of those spicy toppings.

For one of these cornbread muffins, it's about 250 calories.

If you cut one in half, it's 125 calories.

It's a nice little boost for your day and it's not going to cost you too many calories that will break your calorie bank.

After 30 minutes in the oven and cooling time...Enjoy!

What's the title of the famous book?

"If You Give a Moose a Muffin..." He'll want to go to the store to get some more muffin mix!

So, make these muffins once in a while, but be careful not to get carried away...
