I love tomatoes!
Yellow tomatoes, red tomatoes, big tomatoes, small tomatoes... every kind of tomato you can imagine, I'll eat it.
I have a delicious tomato based salad that is low in calories, filling and delicious.
While the yellow tomatoes are still available in the markets, you might enjoy this salad.

Sunburst Yellow Tomato Salad
1 1/4 cups of Sunburst Yellow Tomatoes, sliced in half - 90 calories
1 full slice red onion, use as single raw onion rings - 6 calories
1/2 cup canned black beans, cooked & cooled - 110 calories
3/4 cup of green beans, cooked & cooled - 25 calories
5 basil leaves, chopped - 1 calorie
3 tbsp. balsamic vinegar, drizzled to taste - 42 calories
salt & pepper to taste
TOTAL: 274 Calories
Pile the sliced tomatoes on the middle of a white plate with the seed side up.
Lay the single raw onion rings on top of the tomatoes.
Line the outside of the tomatoes with the green beans.
Sprinkle black beans all over the dish.
Sprinkle the basil leaves on top of the black beans, onion, tomatoes and green beans.
Drizzle with the balsamic vinegar.
Add salt & pepper to taste.
