Response to Pig Farm Documentary... Bean Salad!

HBO has been re-airing the documentary Death on a Factory Farm.

"Each year, ten billion animals are raised for consumption in the United States, mostly on sprawling, industrialized farms..."

It is so very sad to see how the hogs were treated on this farm.

The documentary evidence is so disturbing and well-done, I took action in my own life.

Instead of eating meat, I've been focusing on vegetable dishes.

My mother sent me one of her favorite recipes, which I've changed over the years to cut back on the sugar.  I also substitute black beans for the lima beans, because lima beans are hard to find in Southern California.  I also add garbanzo beans.  My dressing doesn't have all of the sugar in it either.

This is my grandmother's actual recipe and I share it with you if you'd like to consider eating more vegetables.

Bean Salad:

1 1/2 cups Lima Beans
1 1/2 cups Green Beans
1 1/2 cups Kidney Beans
1/2 cup diced Carrots
1/2 cup chopped onions

Dressing for Bean Salad:

1 cup vinegar
1 1/2 cups sugar
1/2 cup salad oil
1/2 tsp salt
1/4 tsp pepper

Directions:

Drain all of the beans, add pepper, onion, and carrots.  Heat salad oil, vinegar, and sugar until the sugar melts.  Do not boil.  Pour over beans.  Chill and serve.

**I would still eliminate or cut back on the sugar, but that's me.  It's fewer calories and better for you that way.  Whatever you decide... enjoy your vegetables!
